Yam Fries With Egg Sauce

  1. In a blender, combine tomatoes, peppers, rough chopped onion and garlic. Process till somewhat smooth and creamy, about 30 seconds.

  2. Heat up vegetable oil and saute the sliced onion for 2 - 3 minutes with a pinch of salt, till onions soften. Season with curry powder, thyme, and salt to taste and stir until aromatic, about 1 minute.

  3. Add the blended tomato mixture and cook on medium heat for 5 - 7 minutes, lid off.

  4. Add eggs, and 1/2 of the green bell peppers and stir gently. Cook for another 5 minutes or until oil bubbles round the sides and on top, stirring occasionally.

  5. Take off the heat, add the remaining green bell pepper, cover with a lid and let sit for 2 - 3 minutes.

  6. Deep fry Sympli Thick Cut Chips at 180 °C (356 °F) for 5 mins, or oil brush and bake at 225 °C (437 °F) for 10 minutes.

  7. Serve Chips with Egg sauce.
